Above all, however, we aim to talk about taste. We can try to describe the color of the vegetables after treatment with induced maturation© and the texture of the meat and fish. waveco®, the first and only machine in the world that uses the focused ultrasound technique of induced maturation©, is the absolute protagonist of our taste laboratories. In Next Cooking Generation’s Food Lab, you can have a close look to our waveco® machine, observe its functioning, and see for yourself the benefits of its use in a professional kitchen.
Our taste labs are located in 3 strategic locations: Milan, Teramo and Rome.. The Milan Hub brings together chefs and professionals from northern Italy; in Teramo, there is the historic operating lab where our technology was born (waveco® is entirely produced in Italy, with Italian and European components, an example of 4.0 Industry), while in Rome, there is our most recent operating lab.
How a waveco® demo works
In our Milan, Teramo and Rome hubs you can take part in demonstrations of the use of waveco®, the tastings and events. Hubs are aggregation centers where chefs – friends, testimonials and collaborators – can meet in order to experiment and discuss the uses of induced maturation©. The demo is mainly a sensory journey, dedicated to food testing, but there is plenty of space intended for training on the benefits of introducing waveco® in your kitchen.
