The focused ultrasound technology applied to waveco® is the result of an engineering study that started in 2013, the year when the waveco core project, a parterre of instruments that benefit from ultrasound, was born. There’s ultrasounds, and then there’s waveco®

Inside its tank waveco® works with water, which is the transmission vehicle of the focused ultrasounds at a temperature range that never exceeds 30 degrees centigrade (water temperature, the food will have a significantly lower temperature). This temperature is established according to studies conducted together with the University Faculty of Veterinary in Teramo, and it is a temperature within which bacterial proliferation does not occur, while cooking processes which affect the action of the ultrasounds are not triggered. Furthermore, the design of waveco® highlighted how a “focused” action of the waves had tangible effects on food, unlike other “ultrasonic tanks” found on the market.
Focused wave and chaotic wave
As mentioned, waveco® adopts focused waves, which means that a predefined number of waves arrive at each point of the pool, starting from the base and reaching the surface of the water, in order to perform their action and obtain the benefits expected. Instead, what happens with other “ultrasound machines” which are actually smaller tanks intended for cleaning silverware and cutlery, is a chaotic action, which means that many waves are shot in random directions in the water, without any focus. Moreover, as these machines are intended for cleaning, they work with temperatures that exceed even 60 degrees, therefore triggering cooking processes. Once gelled, the fibers no longer receive any effect from the ultrasounds.
