waveco® is not just technological innovation, it is something more, something that allows you to make your work easier and look for new culinary solutions in order to get the best possible result on every kind of food. waveco® 2021 comes with new features such as: image makeover, technical improvement and 4.0 ready industry. The value of this machine and the effectiveness of induced maturation© are confirmed by the results obtained in the first two years of commercialisation, which promoted the diffusion of the machine in restaurants all over the world.

waveco® is a professional machine, the result of a long technological development process carried out by our team, Next Cooking Generation, an innovative start-up that operates in research, engineering and building of highly technological machines destined to the food sector. When we first imagined our waveco® concept, we started from the core need of people working in kitchens: finding a better and more profitable way to perform culinary techniques, in order to shift the focus back to the food product and fully enhance it.

This way, induced maturation© was born, a new technique based on the use of ultrasounds, the only one studied, calibrated and patented by our ncg team, and validated by research studies run by two italian Universities on every kind of food.

The waveco® method allows you to improve the procedures you usually perform in your kitchen while shortening preparation time, reducing cooking temperature and improving the subsequent phase of food storage, thanks to the action of ultrasounds, which reduces the bacterial load and therefore considerably extends the shelf life of the final product.

According to the findings of university tests, induced maturation© ensures an immediate reduction in the bacterial load equivalent to 3.0 logarithms, a condition that makes it possible to extend the shelf life of any food up to three times, thus increasing food safety and ensuring a better optimisation of the product performed by chefs in their restaurant.

    Countertop model

    Easy to move, it is the most compact version of waveco ®. Its small size makes it suitable to be placed and used on any professional kitchen counter. In this version, the draining system is manual: the valve is placed in the lower, left side of the machine. Its position ensures easy water drainage, without getting in the way of the staff while attending to their tasks in the kitchen.
