2017-2022: what happened during waveco®'s first 5 years

It has already been 5 years since waveco® was presented at Host 2017 and 4 years since Next Cooking Generation, a 100% made in Italy start-up, began its marketing in 2018. Let's see what waveco® has been on over the years.

The debut of waveco®

The NCG team presented waveco® at Host 2017, for the first time ever: here the machine won the Smart Label - Innovation Technology award. With its show cooking and live demonstrations, the stand welcomes about 1500 people, including onlookers and professionals. Participation is also enhanced by the intervention of one of the first chefs to have believed in this technology: Giuseppe Iannotti, 1 Michelin Star with his Kresios restaurant. 

The success of 2019

In 2019 NCG returns to Host to present to the public an advanced version of waveco® together with important testimonials, chefs who have installed the machine in their kitchens. Among them are Valerio Centofanti (L'Angolo di Abruzzo, Carsoli), the director of the Gambero Rosso Academy Igles Corelli and Massimo Garofoli (La Mescola, Civitanova Marche). In addition, waveco® won the Smart Label award for the second time at Host 2019.

2019 is also the year when waveco® runs the major European fairs: from Ho.re.ca Expo in Athens to HCJ Japan's Exhibition in Japan. It gets the HOT Concept Madrid award for the "Machine of the Year" category and is present at the European Congress of the JRE (Jeunes Restaurateurs) in Liège.

2020, a year dedicated to research

Next Cooking Generation did not stop even in 2020, the year of the outbreak of the Covid-19 pandemic, when the entire Horeca sector was blocked due to the restrictions of the health emergency. NCG chose to devote itself to technological research in order to build increasingly innovative machinery with the aim of improving food quality and guaranteeing the food safety of their customers. Thanks to the University of Teramo researchers team, led by Dr. Luca Pennisi, the induced maturation© technique is validated and obtains the patent, together with a prestigious publication in the scientific journal Italian Journal of Food Safety.

waveco® today

In 2021, with the restart of fairs, waveco® participated for the first time at Sirha in Lyon and returned for the third time to Host, strengthening its consensus among Italian chefs. The NCG team was also invited to speak on the radio program “Delivery” by RTL 102.5 News to talk about waveco® and innovation in the food world.

Over the course of these 5 years, waveco® has come a long way. It is now included in the didactic plans of training institutes such as Gambero Rosso Academy in Rome and Dolce e Salato in Caserta. And, to date, more than 150 waveco® have been installed in Italy and abroad, including exclusive locations such as Corrado Assenza's Caffè Sicilia and Carlo Cracco's restaurant in Portofino.
